I find that I come up with my best ideas whilst walking the dog. Salem and I head out on a 1.5 mile walk every day, and though he is having the time of life, it can get slightly boring for yours truly. I often find my mind wandering among a spectrum of subjects.
One day last week, I was thinking about what I could come up with for the blog that isn’t a recipe I adapted from another site or saw on Pinterest. I wanted to come up with an original.
Lately, my husband has really enjoyed pancakes for breakfast. What’s funny is, (and I suppose a blessing in disguise) he doesn’t care for flavors; he just likes plain old pancakes with syrup and butter. This has always been a mystery to me as a cook and a lover of food in general. What I do know is, he loves Nutella, so as I was walking, it dawned on me to make Nutella stuffed pancakes! Who wouldn’t like those I ask you? We also had some really pretty blackberries in the fridge leftover from Easter, so I incorporated those as well.
For this recipe, you will need:
· 1 cup Pancake mix (yes I cheated and took a shortcut J)
· 2/3 cup of water
· A dozen blackberries, blended
· Pinch sugar
· 6 separate tsp. of Nutella
· 2 tbsp. vegetable oil
· Syrup for drizzling
Combine the pancake mix with water. Place the blackberries and the sugar in a blender or food processor and blend. It’s ok if they’re not completely blended and a little lumpy. Mix the blackberries into the pancake mixture.
Heat a non-stick skillet or frying pan over medium heat and add half the oil. When the oil is hot, add a small dollop of the pancake mixture to the pan. Depending on the size of your pan, you can do about 3 small dollops at once.
Note: You can test the pan’s heat by dropping a drop of water off your finger; if it sizzles, the pan is ready for your pancakes.
Add a teaspoon of Nutella to the center of each small dollop, then add another small dollop of the pancake mixture on top of the Nutella, sandwiching it into the middle.
Cook for about 2 minutes on one side, then flip ‘em and do the same to the other side.
Repeat with the second batch.
Drizzle syrup over your pancakes as desired and enjoy!
I never expected pancakes to be this good with fruit! Then adding the Nutella... Should be a regular breakfast item!
